Berrylicious Smoothie

Serena came up with this Berrylicious Smoothie recipe and name, so I must give her full credit. She loves to play around in the kitchen. She’s becoming quite the little chef! This smoothie was such a hit I had to share it with you.

Often after school, my girls come home hungry and smoothies tend to be an easy answer to curb their hunger. To create the Berrylicious Smoothie, Serena tossed in a few frozen berries to the vitamix. We had half an orange left over from breakfast so she peeled that and threw it in too. She used half coconut water (we buy fresh young coconuts, husk them and bottle the water for smoothies and freeze the flesh for smoothies or raw desserts) and half coconut milk and a handful of coconut meat, a tbsp of hemp and chia seeds, half a banana and pushed start. Since her face was covered with the pink smoothie after licking the spatula clean I knew it was a winner.

This recipe turns out quite thick allowing you to easily turn it into a smoothie bowl, which can be a delicious breakfast bowl,  or as my girls prefer, an afterschool snack. Add up to ¼ cup more of liquid to thin out the consistency while still having the smoothie like texture. I typically do not add ice, but you can also do this to thin it out.

Picky kids, who refuse to eat breakfast? No problem. The Berrylicious Smoothie is a crowd pleaser. Naturally sweet and packed full of protein and fiber. Clean up is easy, with only the blender to rinse off.

There is nothing better than a handful of fresh picked berries in the summer. They are naturally sweet, rich in vitamin C, antioxidants and considered a beauty food! Yes please! Try making this whenever you have fresh, local berries on hand and I promise you’ll notice a difference in the flavour. We try to support local organic farmers whenever possible. One of my weekly rituals during the warmer months is to head to a farmers market and buy whatever berries are in season. We’ve enjoyed all the various raspberries, from traditional to black caps and tayberries. All equally delicious in this smoothie.

The Berrylicious Smoothie is another simple, delicious and refreshing smoothie your whole family will love.  It’s an excellent choice to turn into an ice pop, popsicle or ice lolly – depending where you live in the world.  These are often on rotation in our freezer.

Berrylicious Smoothie
Ingredients
INGREDIENTS
  • ½ cup frozen strawberries
  • ½ cup frozen raspberries
  • ½ cup frozen blueberries
  • 1 frozen banana, chopped
  • ½ cup frozen coconut meat
  • 1 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 1/2 orange, peeled
  • 4 oz coconut water
  • 4 oz coconut milk
Instructions
INSTRUCTIONS
  1. Pour in the coconut water and milk to a high speed blender. Follow with the hemp and chia seeds, fresh orange. Then the remaining fruit and coconut meat.

  2. Using the plunger while the blender is turned on, push the fruit down and blend until thick and creamy. Add more liquid as needed, especially if you are not using a vitamix – this will help to blend it easier.

Recipe Notes
  • Top with any goodies you have on hand. Ie. granola, ground nuts, coconut chips, bee pollen, fresh fruit etc.
  • Depending on how thick you make it, you might want to use a spoon vs a straw and turn it into a smoothie bowl.
