Coconut Yoghurt, fresh berries & granola

We all have days when we need a quick brekkie, or something portable when you are racing out the door. One of my all time favourites is a rich creamy unsweetened coconut yoghurt, topped with farmers market fresh berries and homemade granola. I sprinkle hemp and chia seeds on top for extra protein and wow it really sustains me until lunchtime.

Whether you choose whole-milk yoghurt or a plant based alternative, always read the labels and check out the sugar content. Chances are the “flavoured” ones have a crazy high sugar content – not good!! You can control the natural sugar content yourself and personalize a plain yoghurt with fresh fruit.

Low-fat and nonfat versions, what used to be the trend, are heavily processed, contain much fewer nutrients and are usually higher in carbohydrates.

I often make a “parfait” for my girls as a school snack. If you try this, just remember to keep the dried goodies separate from the yoghurt and fruit so they don’t get soggy. Serena is a huge fan of customizing her own parfaits. She likes to colour the yoghurt using natural ingredients like E3-Live for a gorgeous blue, or pitaya powder for pink. Such a creative and fun way to get your kids eating healthy foods.

Ingredients
INGREDIENTS:
  • 1 cup your favourite unsweetened yoghurt
  • Handful fresh berries
  • 2 tbsp granola
  • 1 tsp chia seeds
Instructions
DIRECTIONS:
  1. Combine all ingredients above and enjoy!

Recipe Notes

NOTE:

  • Be sure to use whole plain yogurt – it’s higher in nutrients
  • Feel free to substitute coconut or nut-based yogurt. Remember to read the label to make sure there is no added sugar
