Easy Breezy Green Smoothie
Do you ever have days where you want something healthy to eat but don’t really have the energy or motivation to get super creative?
I had one of those days today. After my workout this morning I needed a refresher and was feeling a little peckish. Usually l eat 1/2 an apple with a couple tablespoons of almond butter but after a hot yoga class I was craving a green smoothie.
Yesterday the girls and I did a little grocery shopping. We stocked up on a few pantry and freezer items as well as some delicious in season organic asparagus. Side note… did you know asparagus is poisonous to dogs? Long story, but be careful your fur babies don’t lick any crumbs which might contain any asparagus leftovers, we learned this the hard way.

By now if you’ve read any of my previous posts you know my favourite time saving tip is to keep a couple bags of frozen greens in my freezer. This way I can quickly add them to any pasta dish, buddha bowl, soup or smoothie. This is what saved me today. When I opened my fridge I stood there contemplating my options. I saw the kale and spinach I purchased the day before but I was not in the mood to rinse and dry them, nor did I want to cut into the pineapple Serena begged me to buy. I wanted instant gratification, I wanted quick and easy. Do you ever have those days?
I found my solution in the freezer. There were 2 newly purchased bags of frozen greens just waiting to be eaten, plus I had leftover pineapple chunks from Serena’s birthday party that I had frozen.
Easy Breezy…
I swear this green smoothie took me no more than 2 minutes to prepare. And that includes halving an avocado and cutting the peel off a lemon. All I did was toss everything into my high speed blender, turn the knob to frozen and voila within 2 mins I was slurping the side of my glass.
As a health coach I get asked a lot which blender I prefer. Keep in mind I make a lot of homemade soups, smoothies, vegan desserts, nut butters and so much more that I need a true powerhorse blender. After testing a few of the newer models I decided on this vitamix and I LOVE IT. After 12 years of use from my previous vitamix I didn’t even look at other brands. I love the power of this version and how compact it is, fitting easily under my kitchen cabinets. Honestly, you cannot go wrong with any of the blenders vitamix puts out. I’ll create a page soon with all my kitchen must have gadgets, so keep an eye out for that!
I choose to create this smoothie with a thicker consistency so I could use a spoon rather than a straw. Sometimes when I drink smoothies from a straw I get an awful brain freeze. If you have ever experienced one then you’ll understand my desire to chew my smoothie vs inhaling it via a straw.
Smoothie tips
If you are new to green smoothies, add a couple extra pieces of frozen pineapple to give it a little extra sweetness. Swap out frozen banana for peeled and lightly steamed zucchini. Add your favourite protein power. In the easy breezy green smoothie I use hemp seeds. They provide beneficial protein needed post workout, and they also provide the creamy base which is a healthy option to using dairy, or any pre packaged nut milks.

- 1/2 cup frozen spinach
- 1/2 cup frozen kale
- 1 inch fresh ginger
- 1 lemon peeled
- 1/4 avocado peeled, pit removed
- 1 cup coconut water
- 1 tbsp hemp seeds
- 6 sprigs fresh cilantro
- 6 sprigs fresh flat leaf parsley
- 1/3 cup frozen pineapple
First add coconut water and hemp seeds to your high speed blender, followed by the fresh herbs and lemon. Add the remaining ingredients and blend until creamy smooth. Drink immediately. Can be stored in the refrigerator.
