Garlic Dill Chickpeas
Garlic Dill Chickpeas are hands down one of Serena’s favourite school snacks. We came across a very similar recipe in the deli at our local co-op. It was motivation for us to create our own version using dill as a twist. Chickpeas, or more commonly referred to as Garbanzo beans in the United States are a fabulous way to get plant based protein into your diet. As an added bonus they are full of insoluble fibre which we need for good digestive health.

Chickpeas are often pureed and used in hummus – another of Serena’s favourite snacks and staples in her school lunches. They have a mild nutty flavour and are versatile for so many different recipes. Have you ever tried roasting them?
If you buy chickpeas from the bulk section, be sure to soak them overnight then rinse thoroughly before cooking. If you are anything like me and are sensitive to legumes. Digesting them can be particularly uncomfortable and embarrassing. Be sure to use this technique to reduce the oligosaccharides (gas causing). You can also try sprouting them or when cooking add a piece of kombu to the pot prior to boiling, then remove it after the beans are fully cooked.
In a pinch purchase bpa free cans of organic chickpeas (but I rinse them thoroughly before using). This will definitely save you time, and this recipe will be ready in less than 5 minutes!
- 1 can of garbanzo beans rinsed thoroughly
- 2 tbsp dried dill
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tsp pink himalayan salt
- Pepper to taste
- In a bowl, place all ingredients, stir until mixed evenly. Refrigerate until serving.
