How to make healthy creamy fruit popsicles

Hello beautiful friends,

Can you believe we are already in July? Time is flying by! It probably comes as no surprise that when I heard the sound of the ice-cream truck it motivated me to whip up some ‘healthy’ alternatives for my girls.

That’s why I’m so excited to share today’s recipe! The girls and I got to work this morning in the kitchen and after much debate we settled on creamy mango popsicles dipped in chocolate.

Here’s the best part — these frozen treats of yumminess can be turned into ice-cream, or forget freezing and eat as pudding. Get ready to take a blissful bite of summer.

I like to make a double batch of these fruit popsicles and keep them for super hot days (come on Seattle), or, whenever the sweet tooth craving kicks in.

If you are feeling decadent whip up some of the chocolate dip I’ve included. Drizzle, dip or stir into the pudding mix, then decorate your fruit popsicles with nuts, hemp seeds, dried berries or coconut flakes. Yum!

Steps to make healthy creamy fruit popsicles

  1. add non dairy milk of choice to blender
  2. add fruit of choice to blender
  3. 1/4 tsp vanilla extract
  4. cashew nuts (optional)
  5. Blend until smooth
  6. Pour into popsicle molds and freeze
  7. Dip into chocolate and decorate with added goodies
  8. Enjoy!

Creamy Mango Popsicles
Ingredients
Creamy Mano Popsicles
  • 2 fresh mangos, skin removed, chopped choose ripe and ready to eat mangos
  • 1 1/2 cup non dairy milk of choice
  • 1 tbsp raw cashews optional
Chocolate Dip
  • 3 tbsp coconut oil
  • 3 tbsp raw cacao powser
  • 1-2 tsp maple syrup*
  • 1/2 tsp vanilla extract
  • pinch sea salt
Instructions
Creamy Mango Popsicles
  1. Blend all ingredients until smooth

  2. Pour into popsicle molds and freeze until sold, minimum of 4 hours.

Chocolate Dip
  1. Using a double burner, bring water to a boil, reduce to simmer. Add all ingredients to a heat proof bowl, stir a few times to combine when coconut oil has melted and chocolate is lump free, remove from heat. Allow to cool until chocolate starts to thicken but is still smooth.

  2. Drizzle over popsicles or dip popsicles into the chocolate.

Recipe Notes
  • Maple syrup alternatives: honey, brown rice syrup, coconut nectar
  • have fun dipping chocolate dipped popsicles into coconut chips, nuts, seeds, dried fruit, chocolate chips etc.

Extras:

🖤 If your popsicles are difficult to pull out of the mold, run them under warm water for a few seconds.
