Herbed Cauli’ Rice
This Herbed Cauli’ Rice recipe is the most delicious rice alternative I’ve made yet! Whenever possible I swap out grains for plants. I love sneaking in a few more veggies when I can, especially if I save prep or cooking time.
Rice tends to make dishes feel heavy, and for some people (myself included) leaves you feeling bloated.
My favourite technique to use is my food processor. I chop the Cauli into large chunks and pulse until they turn into the size of rice. I then remove all excess moisture from the “rice” by transferring the cauli rice to a nut milk bag. Then I squeeze out all remaining water. This step is a must, as it ensures your “rice” to be light and fluffy, not soggy.
Once you have your cauli’ rice, it’s super simple to cook! In a preheated skillet add 1 tbsp of olive oil and your “rice”, cover and continue to sauté for approx 5 mins. Stir occasionally. You can eat it plain or to add a little flavour turn it into Herbed Cauli’ Rice like I did. Add 2 tbsp of dried chives, a pinch of garlic powder and a pinch of salt and pepper, give it a stir and then sauté.
It took me 10 mins total (less time than steaming a pot of rice) to prep, sauté and serve this recipe. When serving I added a few fresh chive flowers I had growing in my garden for a little extra colour and taste.

A delicious alternative to rice.
- 1 large head of cauliflower chopped
- 2 tbsp dried chives
- 1 tsp garlic powder
- 1 tbsp Olive oil
- pinch salt and pepper
Remove all greens. Then wash and thoroughly dry cauliflower
Chop the cauliflower into small chunks. Either using the grater attachment, grate the cauliflower into "rice", or with a blade, pulse until rice is formed.
Transfer to a clean nut milk bag, and squeeze excess water out.

- You can use a box grater if you don't have a food processor
- Paper towels make a great alternative to a nut milk bag for extracting excess moisture
