Kale Salad with fresh Figs

A simple Kale salad is often my lunch of choice. It is so quick and simple to make! I enjoy being creative adding whatever is in season to change it up this way I never get bored of eating it. I start with my Simple Kale salad with Lemon Dijon Vinaigrette and then I get creative!

This scrumptious Kale Salad with fresh Figs is my favourite.  Have fun customizing it, by adding leftover roasted veggies, swap out the figs for citrus fruit, apple or pears when in season. Add a handful of  nuts, avocado or anything that needs eating up in fridge. Honestly, you can personalize it with just about anything.

When Figs are in season I jump at any opportunity to add them to a dish, they are one my absolute favourite fruits. Be sure to try my stuffed figs in balsamic glaze for a decadent appetizer.

For a little crunch I added a sprinkle of my yummy Savory Roasted Almond slices – a delicious and healthy snack all on its own.

If you are not a lover of capers, feel free to leave them out. I love the salty taste they provide and combined with fresh figs.

Kale Salad with Fresh Figs
Ingredients
  • 1 Large bunch of lacinato kale washed, de-stemmed and sliced into 1” ribbons
  • 1 cup English cucumber sliced width ways then halved
  • 1 cup Cherry tomatoes sliced
  • 1 cup Figs sliced into quarters
  • ¼ cup Capers
Dressing:
  • ¼ cup Extra Virgin Olive Oil
  • 2 tbsp Fresh Squeezed Lemon Juice
  • 1 tbsp Dijon Mustard
  • 1 tbsp Honey
  • tsp Pink Himalayan Salt or to taste
  • Black Pepper to taste
Toasted Savory Almonds
  • 1 cup raw almond slices
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • salt and pepper to taste
Instructions
  1. In a large bowl Massage cut Kale leaves with 1/2 of the dressing until softened

  2. Add remaining salad ingredients and pour remaining salad dressing on top. Toss lightly to cover. 

  3. Serve with Savory Toasted Almonds

Toasted Savory Almonds
  1. In a toaster oven or skillet, add olive oil. Stir in almonds and spices and toast until golden brown and fragrant.  Set aside to cool.
