oatmeal raisin cookies
These absolutely moreish Oatmeal Raisin Cookies are so unbelievably delicious, and just as good as the classic version!
Most cookie recipes, even the vegan and gluten free ones, call for butter, flour and white sugar. It is “the” standard in cookies and the easy way to do things. But I prefer to challenge myself more creatively with my recipes making them a lot healthier without compromising on taste. I promise you these are delicious!
These babies hit jackpot! Even our movers agreed they were just as tasty as the old classic and were clueless until I told them they were refined sugar free, gluten free and vegan.
They have a wonderfully rich caramel-like flavor thanks to using roasted almond butter and coconut sugar, and a healthy dose of vanilla. Roasted almond butter has such a richer and sweeter flavor than raw almond butter. The batter is so incredibly delicious all on it’s own, it’s hard to make it to the actual baking (feel free to eat them raw, just be sure to store them in the refrigerator).
Don’t worry if you are allergic to nuts, sunbutter can easily be subbed, but keep in mind that it will leave a sunbutter taste, equally delicious if you ask me.
And, if you are anything like my sister and don’t care for raisins, add chocolate chips instead! 😉 Or, if you prefer something more simple, make the same batter and ditch the raisins and eat them plain. I often pop a couple on the baking tray like this for myself.
You won't believe these delicious oatmeal raisin cookies are Vegan, Gluten Free, and refined sugar free!
- 1 cup GF oats
- 3/4 cup almond flour - fine
- 1 cup raisins
- 2 tbsp ground flax seeds
- 1 tbsp hemp seeds
- 2 tsp vanilla extract
- 3 tsp ground cinnamon
- 1/2 cup coconut sugar
- 1 tbsp maple syrup (or sub 2tbsp coconut sugar & 1 tbsp more milk)
- 1/2 tsp salt
- 1/4 cup coconut oil
- 1 cup almond butter (or peanut, cashew etc)
- 1/4 cup plant based milk (almond, oat, coconut, hemp, cashew etc)
Preheat oven to 325 degrees F
Add all dry ingredients (except raisins) to a large mixing bowl, mix thoroughly.
Whisk together milk, vanilla extract and maple syrup. Add in almond butter and coconut oil and mix thoroughly.
Pout wet mixture into dry mixture and stir in raisins, mix thoroughly.*
Using a cookie or ice cream scoop, divide dough into a dozen cookies on parchment paper covered baking sheet. (more if want smaller cookies)
Bake for 14 minutes.
Remove and top with additional sea salt if desired, and allow to cool. Enjoy!
*Mixture should be gooey and sticky. Add more milk if you like really soft gooey cookies.yy
