Roasted Brussel Sprouts with Fresh Pomegranate Seeds

Roasted Brussel Sprouts are one of my favourite vegetables. When I once added a massive handful of juicy fresh pomegranate seeds they quickly became a hit at our house.

If you’ve never been a fan of brussel sprouts or only had them boiled or steamed, this recipe will turn you into a fan. They are heavenly roasted!

Add them to your favourite Kale salad or serve as a simple side dish, I promise they will be a hit!

Brussels only take 25-30 mins to roast, depending on the size and how crispy you want them on the outside. Tip… 1/2 or 1/4 depending on the size so they roast quicker, plus the center will be cooked to perfection!

HOW TO MAKE THE BEST OVEN ROASTED VEGGIES!

These simple tips apply when roasting all vegetables.

  • Make sure the vegetables don’t overlap! To avoid overlap, use a large sheet pan or use 2 different sheet pans. You want to make sure the vegetables each have their own “personal space” and aren’t overlapping with each other.
  • Use a delicious spice mixture. Choose fresh black pepper and sea salt vs regular table salt and season with fresh herbs and spices.
  • Flip the veggies halfway through baking. After 20 minutes of roasting, make sure to flip and stir the vegetables. This ensures an even roasting on ALL sides of ALL veggies. Simple right?

Roasted Brussel Sprouts with fresh Pomegranate seeds
Ingredients
  • 2 lbs brussel sprouts
  • 1 pomegranate peel, and keep seeds
Instructions
  1. Preheat oven to 400 degrees F. Wash thoroughly, remove the outer leaves and cut off the brown ends of the Brussel Sprouts.

  2. Mix them in a bowl with olive oil, salt and pepper. Pour onto a baking sheet and roast for 25-30 minutes or until crispy on the outside and tender on the inside.

  3. Place all seeds from a pomegranate into a bowl and set aside.

  4. Serve immediately with fresh pomegranate seeds.
