Roasted Rainbow Carrots

Deliciously seasoned roasted rainbow carrots are an incredible festive edition to any dish you are serving. We make roasted veggies at least once a week – they are a yummy addition to my favourite Kale Salad recipe, a dish on their own or served as a side dish.

I am loving the addition of Rainbow Carrots I’m able to purchase at my local co-op this time of year. I love how festive they look on the table, even if they are still carrots, Serena likes to call them magical carrots.

If are unable to find them at your local co-op use your typical organic carrots.

This recipe is extremely easy, but I do have a few tips to make sure these turn out ultra yum!

How to make the best oven roasted veggies!

These simple tips apply when roasting all vegetables.

  • Make sure the vegetables don’t overlap! To avoid overlap, use a large sheet pan or use 2 different sheet pans. You want to make sure the vegetables each have their own “personal space” and aren’t overlapping with each other.
  • Use a delicious spice mixture. Choose fresh black pepper and sea salt vs regular table salt and season with fresh herbs and spices.
  • Flip the veggies halfway through baking. After 20 minutes of roasting, make sure to flip and stir the vegetables. This ensures an even roasting on ALL sides of ALL veggies. Simple right?
Roasted Rainbow Carrots
Ingredients
  • 2 bunches rainbow carrots washed and peeled
  • 1 tsp dried oregano
  • 1 tsp crushed dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • Fresh cracked pepper and sea salt
  • Optional: fresh herbs (such as thyme, parsley) to garnish with
  • 2 tbsp Olive oil you may need a bit more
Instructions
  1. Preheat oven to 400 degrees F. Using a large sheet pan, lay the carrots in one even layer. (remember not to stack them or you will end up steaming the veggies vs. roasting them).

  2. In a cup, mix all herbs, salt and pepper with olive oil. Drizzle over the carrots.

  3. Place the baking tray on the middle rack in oven. Bake for 25 mins. Flip the carrots half way into baking.

  4. Remove from the oven and enjoy immediately.
