Sea Salt Sunbutter Fudge
I created these heavenly sea salt sunbutter fudge bites on a whim today.
When I working on the ChampagneYogi blog I’m most often at home. It allows me the luxury to plan my day how I want, but… and here is the big but. If i’m recipe testing as I was today, I have no-one else home with me to watch over how much I sample. Today, I may have eaten one or two too many ooey gooey heavenly bites of fudge. I confess, this recipe is AMAZING! You are going to love everything about these vegan, gluten free and refined sugar free sea salt sunbutter fudge bites. Wow, that was a mouthful. Literally!
I bought sunbutter other day from our local co-op and thought i’d give my stomach a break from almonds and my addiction to almond butter. My husband would say it’s a serious one!
I followed my usual fudge recipe to the T, and was thrilled with the outcome. Honestly, I wasn’t thinking the results would be this delicious.
6 Ingredients:
- sunbutter
- coconut butter
- cacao powder
- medjool dates
- honey (optional)
- vanilla
I absolutely loved them, hence the reason I may have indulged just a tad too much. My girls are massive fans and my chocolate loving husband thought they were a hit.
These sunbutter fudge bites are a much healthier alternative to store bought candy bars.
They are:
nut free, gluten free, no bake
raw (optional), dairy-free, soy-free
simple to prepare, refined sugar free
high in fiber, highly addictive and DELICIOUS!
Best of all, this recipe is so incredibly simple. You’ll be licking the spoon within 5 minutes – I promise!
A healthier, gluten free, vegan and refined sugar free option to fudge.
- 1 cup sunflower seed butter
- 1 cup coconut butter coconut oil will work too
- 1 cup raw cacao powder
- 1 cup medjool dates pitted, soaked if really hard
- 1 tbsp raw honey to taste/optional
- 1/4 tsp sea salt plus more for sprinkling on top
- 1 tsp vanilla extract
In a food processor, add all ingredients and blend until creamy. Voila!
Line a 8x8 inch pan with parchment. Spoon the sunbutter fudge onto the parchment. Press down using the parchment (it will stick to your fingers otherwise).
Place in the freezer for 20-30 mins, or until firm and easy to cut into bite size pieces. Store in a sealed glass container in the refrigerator.
- for a less rich fudge, reduce the cacao powder to 3/4 cup
- the smaller the pan you use, the bigger the bites, don't use a pan bigger than 8x8
- try to use organic ingredients whenever possible
- keep refrigerated as the bites will start to soften (equally delicious, just messy)
- go on, lick the spoon, your fingers 💋
