Vegan French Onion Soup

You are going to LOVE this delicious vegan version of French Onion Soup, plus it is so unbelievably easy to make.

Caramelized onions simmered with herbs and red wine go into this savory vegan French onion soup that I served with vegan and gluten free croutons and a vegan provolone cheese.

There was a time when I didn’t think Serena would eat this as she tends to pick out large chunks of onion whenever she sees them. However, she gave this soup a whopping score of 10 out of 10 for taste and texture!

Red wine gives is that extra robustness you expect with a beef based onion soup. The dash of red chili pepper flakes intensifies the flavour without adding much heat (so my girls tell me).

When I first made this recipe, I accidentally left the onions to caramelize the entire afternoon (6 hours) on low heat, I promise you the taste incredibly delicious, but I know you probably don’t have that kind of time! You can cheat and crank the heat up which cuts down the cooking time by half, but keeping it on low to low medium will give you the intensely caramel flavour you expect. It’s worth it!

Ingredients
  • 2 tbsp olive oil
  • 2 lbs yellow onions thinly sliced
  • 4 cloves garlic minced
  • 1 cup dry red wine optional
  • 2 bay leaves
  • 2 stalks celery diced
  • 2 tsp dried thyme
  • 6 cups veggie broth
  • salt pepper to taste
  • 1 tsp chili pepper flakes optional
Instructions
  1. Begin by prepping onion, celery and garlic.

  2. Heat a large pot over medium heat, add olive oil and veggies. Stir well and allow to cook until they become soft and caramelized; about 1 hour. Stir occasionally.

  3. Stir in wine if using, thyme, bay leaves and chili pepper flakes while soup is simmering. If using red wine, lower heat and continue to cook until wine is reduced by half, about 3 minutes. Otherwise, on low heat add broth and bring heat to medium and allow to simmer to an additional 20 minutes. Stir frequently.

  4. Taste and season with salt and pepper. Serve immediately with your favourite vegan cheese, crusty bread or green salad.
