Ingredients

  • Fresh Pumpkin seeds from a large pumpkin
  • Celtic Sea Salt to taste
  • Black Pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 300 degrees F
  2. In a mixing bowl, toss seeds the olive oil, salt and pepper. Spread the seeds in a single layer on a lined baking sheet. Bake for 20-30 minutes, stir a couple times while they cook. They should be a golden brown colour, but no panic if a few are darker - my hubby prefers them this way.
  3. Remove, and cool before serving.

Recipe Notes

  • If you prefer to wash your seeds, give them a good rinse, then pat them dry.
  • Straight out of the oven they can be a bit chewy, but as soon as they cool, they are lovely and crispy.
