After pitting dates, place into a bowl of warm water to soften. Once soft, remove from water and set aside. Reserve the water.
In your food processor add hazelnuts, almonds and cashews and grind until a ‘butter’ texture forms -- approx 1 minute. Then add dates, raw cacao, chia seeds, hemp seeds, coconut oil, vanilla extract and sea salt and continue to blend until mixture gets sticky and mixture starts to form a ball, approx 1 minute. Add some of the date water as needed if you need the mixture to be stickier.
Using a tsp size, roll mixture into balls with the palms of your hands, then roll the balls in the shredded coconut until evenly coated.
