Blend all ingredients until smooth
Pour into popsicle molds and freeze until sold, minimum of 4 hours.
Using a double burner, bring water to a boil, reduce to simmer. Add all ingredients to a heat proof bowl, stir a few times to combine when coconut oil has melted and chocolate is lump free, remove from heat. Allow to cool until chocolate starts to thicken but is still smooth.
Drizzle over popsicles or dip popsicles into the chocolate.
