Delicious and Simple Lemon Bliss Balls

Ingredients

  • 1 cup raw almonds
  • 1 cup medjool dates pitted, and softened in water
  • pinch of salt to taste
  • zest from one meyer lemon to taste
  • juice from 1/2 meyer lemon
  • 1/2 tsp vanilla, or 1/2 vanilla pod
  • 2 tbsp hemp seeds
  • 1 cup unsweetened shredded coconut plus extra for garnish

Instructions

  1. In a food processor, grind almonds until they form small breadcrumb size chunks.

  2. add remaining ingredients in the order listed and continue to blend until they start to stick together. Have a quick taste, add more lemon zest or salt if needed.

  3. Use your hands to shape the mixture into balls. Roll the balls in the extra coconut and place in the fridge. Enjoy!!

Recipe Notes

  • If you do not have meyer lemons use traditional lemons
  • If you are using essential oils rather than fresh lemon juice and zest, add 4-6 drops of doTERRA lemon essential oil.
  • Store in refrigerator in a sealed container. 
  • Sprouted almonds are my preferred choice as they are much easier to digest.
