Peanut Butter Energy Balls

Ingredients

  • 1/2 cup organic peanut butter
  • 1 1/2 cup medjool dates pits removed (12-16)
  • 1 cup pumpkin seeds
  • 1 cup unsweetened shredded coconut
  • 2/3 cup roasted cashews
  • 1/2 cup raw sunflower seeds
  • 2 tbsp hemp seeds optional

Instructions

  1. Add medjool dates to a food processor, pulse to break them down into small chunks. Add remaining ingredients minus 1 tbsp shredded coconut. Blend until the ingredients start to stick, don't over blend, you want to keep a crunch.

  2. Sprinkle the remaining shredded coconut over the mixture.

  3. Scoop out mixture and roll into a ball. Aim for a golf ball size. Place on a plate and refrigerator until firmed. Store in a sealed glass container in the refrigerator, or the freezer.*

Recipe Notes

  • if your dates are hard and dry, soak them first, reserve the water to add to the mixture as needed to help the balls stick
  • If freezing, remove a couple each morning to thaw before eating (Serena still likes her frozen!)
  • don't over blend, you want to keep some crunch
